Matcha HAS Caffeine

Okay this is not really a recipe type of blog, but take this as a sort of Advice from me to you.

Well, I am writing this now, in the middle of the night fully awake, fully aware of my state of mine.

And I blame the large glass of Matcha float that I drank a while ago.

Let me paint you a picture of the predicament that I am in, I have a deadline, basically a work deadline that I knew that 8 hours normal worktime will surely not be enough. I tried to focus on the task at hand, cancelled about 2 meetings I was keen on attending, and yet, a las, it was 6pm and I was not even halfway through. And in the typical Australian workplace, most of my colleagues were packing up and saying their farewells. It’s the easter weekend so some of us are starting their weekend early and are even going to fly overseas for some well-deserved break. Anyway, back to me, so the panic is prickling, and the fatigue is creeping up, by 7pm I was the only person in the office. I decided to go out for dinner in a nearby ramen joint, after a nice bowl of hot slurpy goodness, I had the sudden urge for Green Tea or Matcha.

Sidenote: this happens to me often, craving for Matcha.

Anyway, my feet where were already dragging me to where I can get my fix. Before I was even aware of it, I was telling the nice Japanese Lady, “1 Match float” please. I didnt have to look at the menu, I was a regular at this place and I knew what I wanted. In a couple of minutes, I had in my hand my precious MATCHA float, about a size of a Starbucks Grande. And it had Matcha soft serve on top. So, I happily sipped away while i skipped away into the rain, back to my cold crummy office.

Powered by the caffeine, i managed to blast off all the tasks i needed to finish for tomorrow. I look at the clock and it’s 11PM, and yes I’m still at work. I could barely feel the tiredness, the only reason why I know that I’m fatigued is that my hands are feeling tired from scrolling the mouse and me typing. The problem is, i feel like I had just sniffed cocaine, because I’m so very much AWAKE. I really dont know why, i dont know much caffeine Matcha has,but I’m not sleepy at all. It’s now 12:24AM and I’m trying to may be feel tired from writing this.

I am happy about completing the work, and I’m so stressed about not being able to sleep tonight. Tomorrow we’re going to a really long road trip after work, and I really really need to rest.

So this is my advice to whoever is reading this, dont drink Matcha at night.

It has a substantial amount of caffeine, that is keeping me up past midnight.

Induction Changed My Life

I can kind of vaguely remember the first time I had to buy my first induction cooktop when I started to cook for myself. I am a firm advocate of eating and enjoying home cooked meals. I will have a separate article about that in the future. For now, let’s talk about man’s gift to home cooks everywhere: the amazing and unassuming induction cooktop. I first bought a portable one when I was living in Dubai. I once had a electrical cooktop, but it got busted after a couple of years of overuse. And I really do overuse it. So I wanted to get another good product and I saw this was on sale.fagor1

When I got it home and started unboxing it, I was giddy with excitement. Kitchen gadgets tod this to me, probably in the same way my brother gets excited when a new PlayStation game he likes comes out. So there I was, setting up my new cooktop, and was ready to boil water. Clearly, I was only going to make pasta. I crouched down my chaotic cupboards and looked for my best pot and filled it up with water whilst humming Masquerade from Phantom of the Opera. I turned on the cooktop, and it beeped, and beeped, and beeped and after a couple of seconds, it turned off. I mean, mother of pearls! What was going on? I tried it again, and still it would just turn off. I began to wonder if I once again got a defective product. I say once again, because at that time I just bought a really nice food processor and I didn’t know that to make it work you need to cover it up so that the safety switch will be turned off.  I brought it back to the store only for the sales person to give me a “how ignorant” look. I honestly do not want that to happen again, and so I had to fish through the trash the user manual. What is wrong with this stupid induction cooktop! And well, the manual wasn’t really much of a help. Luckily though, since the bloody thing was on sale, the  appliance store threw in a pot with it. It was a hideous looking pot that I was planning to throw out. Then, I double backed, may be… what if… so I filled in this pot with water and there you have it the cooktop was boiling my water in a matter of seconds.

At this point, I decided to go to the internet, and you’re probably thinking, what the hell took you so long? I had no patience look through user reviews on kitchen wares and stuff like that. I started googling about induction compatible pots or whatever. And there you have it, apparently, not all pots are induction ready and you will actually need to look at the label specifically. Unfortunately, most of my Tefal pots and pans were not! Now I have to search for new pots and pans that would be induction friendly, I would say. A good indication is if the pot has a kind of coil icon.

Luckily, they were easy enough to find, and I found a lot from IKEA. and boy, was my life changed! This is even better than a stove with fire cause of the precision of the temperature. I can boil water really quickly. I can set the timer. I can cook and watch Netflix at the same time. I was so happy about it that I bought a set for my mum at home.

Seriously, get one!

Homemade Pizza Faster than Delivery

Are Romans Italians? Or is it the other way around? Did they have pizza back then when they owned almost half of the civilized world at the time? And now, we have the Italians, and they kind of are still well-known for bringing us the most famous and everyone’s favorite take-out food:Pizza. And well, you might say that this become popular thanks to the Muricans, as I myself have memories of eating Pizza Hut when my parents feel like splurging on Sundays. Yes, you read that right, Pizza Hut is a splurge for us. But enough about me. Let’s talk about what I’m going to teach you.  I’m simply going to tell you about the pizza dough recipe that I’ve discovered and enjoy so much.

Well, how did this come about, I love pizza so much, however I cannot afford pizza all the time. And god knows what kind of unknown GMOs that go into making one from a fast food chain. I have made pizza before. You may check it out at my old site – chesnutsykitchen. However, I always did my pizza the traditional way, ie activating yeast, mixing it with the dough, letting it rest, kneading It, letting it rise, knead and bake. So as you can see, it’s really kind of demotivating to actually do pizza on a busy weeknight. I would then just opt to order delivery. It’s not great pizza but it satisfies me just same. However, after ordering, paying and devouring my fast food pizza, I’m always left in a state of dissatisfaction or may be even regret, cause I’ve wasted money on crap food and well, I just ate crap food.

Today, I have found a way to enjoy pizza and not have to hate myself as a result. Today, I present you my favorite pizza mix with two simple ingredients: greek yogurt and self-rising flour. It’s so simple to make. I dont even need to knead it too much because the yogurt makes the dough soft.

So basically, just mix the two ingredients, knead and feel the dough, and when you’ve gotten the texture you like, flatten and bake. I usually start with the same amount, 1 cup of flour to 1 cup of yogurt, then feel my way through it. And I would more likely add more flour in the mix. Whilst I’m doing this, I set my oven to maximum heat.

Then the baking, I flatten my pizza dough on top of a baking sheet lined with baking paper for easier extraction later on. I put on all my fave toppings, and when I say all, I mean, pizza sauce and bocconcini. I pop it in the oven for about… well, until the cheese melts. And VOILA. Home made pizza without the fuzz. You’re welcome.

One batch I added Salmon, the other I topped with a Poached Egg

Matcha-riffic

What is it about matcha and why do people like it? (including myself)

Matcha is starting to get known worldwide, the fact ths Starbucks now offers matcha latte is a testament to that. Side note: those are extremely sweet and really atrocious, run away from it, really Matcha is in fact my daily go to drink ever since I found out about it. Interestingly, I discovered this wonderflu drink/flavour/all aournd goodness from Japan itself  I think I tasted the Green Tea Kitkat (which is matcha) and them boom! I was in love.

Let me define matcha for you, well instead of opening another tab on wiki, let me tell you quickly that it is just Green Tea. But instead of the normal tea wherein you soak the tea leaves in hot water and in turn absorb the essence, the tea leaves are turned into powder form and hence, you have your matcha powder. It will have that really grassy/earthy/bitter flavor that you can imagine tea leaves would have. I like it cause it’s bitter and it gives me that caffeine fix that I need in the morning without the jitters.

Matcha is also super easy to prepare. What I normally do is put in a teaspoon in hotwater and add a dolop of almond milk and any day will suddenly become brighter! (Except Mondays. No amount of matcha can make me hate Mondays any less). And it’s not just a great drink, it’s good for baking too, it adds that nice bitter flavor to balance the sweetness of most baked goods.

Green is good for you too. Do a quick google on all the benefits of Matcha and you’ll be buying a pack faster than I can say “antioxidants”. I’ve read a few, just to make myself feel better about over indulging in a Matcha Crème brulee, they say that it has tons of antioxidants, vitamin c, and helps in controlling your weight.

Japan is Matcha Heaven. And if I have now converted you to become obsessed with this amazing flavour, go to Japan. That country is FILLED with matcha, from Kitkats to soft cream, to biscuits and breads. Basically anything that can be flavoured will be flavoured with matcha.

That’s all for me, as my cup is getting cold. Mmm.

Hello from Dubai side

Hello fellow readers of this blog. Im Chesca and I will be a sort of guest poster on this blog. I do not consider myself an expert in anything really, but like most people I have seen places and gone through a lot of things in life, and I would like to help share some of the things that I have encountered as well. Like may be telling you which path is easier in a fork on the road.

For the first question that I will attempt to answer, how did you manage to go to Dubai?

sea-beach-holiday-vacation-mediumIt’s not really a spectacular story. It’s quite simple actually. I have just quit my previous work in the Philippines, when I say just I mean, about approximately 3 months and my Aunt who was currently living in dubai visited us and saw my lazy bum playing computer games. She told my mum that it would be good for me try it there. Look for a job and live in a new exotic country. And that’s where it all started, they got me a visa, and I flew on the next flight out with them.

It took me a while to find my first job, and then the company downsized, and had to let me go, so I jumped on another job. I had in total 3 jobs when I was living there.

I can say that it was really an eye opening experience for me. One of the good things about living in the Middle east is that you are literally in the middle of everything, I was given a great opportunity to do a bit of traveling when I was there. And after living alone for a while, have enjoyed the wonders of cooking and baking. So, you kind of know where this is going. My articles will mainly focus on travel, and food.
